A lighter flavor profile than Greek Oregano with citrusy notes to the leaves. Some people say it has a more complex flavor as well. Recipe blog reviews mention Italian Oregano is best used fresh without going through the cooking process as its aroma does not tend to overpower other herbs compared to the Greek variety.
